JOB OVERVIEW:
Conducts Pre-Operational inspections and releases production equipment and production rooms to operations daily. Works with sanitation and directs re-cleans as necessary and conducts re-inspection. Completes all inspection paperwork, conducts all swabbing and sampling as applicable during pre-op inspections. Has the authority to suspend operations when sanitation failures are identified and when serious food safety risks are identified.
SHIFT TIME: 2:00 AM – 10:00 AM
DUTIES & RESPONSIBILITIES:
- Pre-Operational Activities and Sanitation Support
- Knowledge of and ensures compliance with CFIA /GFSI & Health & Safety Regulations, Company policies and standard operating procedures regarding food safety programs relating to pre-operational and sanitation activities
- Assists with the development, implementation, maintenance and verification of the sanitation manual and pre-operational activities
- Ensures documentation and resolution of deviations originating from equipment tear down, sanitation and equipment re-assembly as it relates to pre-operational and sanitation activities.
- Notes poor practices of sanitation team and poor conditions of sanitation tools and equipment such as hoses on the floor or fraying etc.
- Notes poor premises and equipment conditions and issue work orders for repairs
- Conducts ATP, Protein and allergen swabbing and sampling as applicable to pre-operational inspection and approval.
- Prepare all samples for Lab submission including paperwork.
- Data entry of inspection results daily into a pre-op log
- Identifies trends related to pre-operational and sanitation performance, through sanitation scorecards and rewash logs, and communicating trends to management
- Maintains the environmental monitoring, including record completion and trending of results
- Must be able to work under pressure to get equipment and rooms released for production on schedule daily
- Must be cooperative with and lead sanitation employees to complete the re-cleaning as needed daily
- Reporting of trend analysis to the QA Manager and Sanitation Manager weekly.
- Attend weekly sanitation meetings.

Education:
- Food related sciences and or technology Diploma or University degree.
Experience:
- Previous pre-op experience desirable
- Previous Quality Assurance role
- Working knowledge of HACCP and GFSI systems and applicable regulatory agencies
Working Environment:
- Varying schedule with overtime required, work on weekends and other shifts required
- Work on the plant floor in a cold environment with slippery floors
- Tolerant of working with raw meat products
- Must be capable of the physical job requirements – standing, climbing ladders, maneuvering under and over equipment safely.
- Must be able to work to tight timelines effectively
Safety Responsibilities:
- Responsible for Food Safety in the Plant
- Responsible for reporting all food safety or health hazards they become aware of
- Responsible for working in a safe manner as per company policies and procedures
