Job Summary:
Working Executive Chef directs and oversees all aspects of the hotel's food and beverage department. Including menu planning and costs, preparation and presentation of food and drinks, and adherence to quality and safety standards. Plans, coordinates, assists and oversees special events. Schedule and fill in any shifts needed.
Duties and Responsibilities General:
- Must possess strong leadership and communication skills, lead not just give orders. Fulfill all necessary work, cleaning, organizing, scheduling, fill in when needed.
- Dress Code- Ensure you lead by example, make sure all team members are in proper Holiday Inn Uniform, wearing hair nets/hats, good hygiene etc.
- Active in recruiting, interviewing and training new hires.
- Available to work day and night shifts as needed.
- Delegate to FOH Manager.
- Assign and monitor all staff training.
- Responsible for daily operations of the F&B department including scheduling, budgeting, improve revenue yoy, food cost analysis and inventory.
- Find coverage for call-outs (in front or back of house) and work the shift if necessary. Set an SOP for your team for call in situations.
- Develop, monitor and assist with deep cleaning log.
- Ensure lobby/patio area is presentable and welcoming.
- Conduct inspections at the bar and back of house to ensure checklists are complete. Including deep cleaning, filling ice, rolling silverware, food rotation, dating items and stocking.
- Develop and update menu items including price adjustments.
- Coordinate and discuss catering, meeting room bookings and group bookings with the Director of Sales.
- Actively use Quore. Ensure all F&B team members are reviewing and utilizing Quore daily.
- Maintain department hours. Work with Operations Manager or GM to ensure overtime is kept minimal.
- Hold team accountable, make sure all team members are consistently performing all duties and staying on task. And make sure we are encouraging our team as well as administering disciplinary action when needed.
- Address any issues that may arise immediately do not let trending issues continue.
- Must have a positive attitude and appearance.
- Have department QA ready at all times. This includes rotating, dating, prepping, cleaning and completing IHG training.
